Please tell me that you are a fan of quinoa because I am seriously in love with it
and Kevin?
Ya, not so much.
He has eaten it in the past but finally admitted to me that he would just rather pass.
And now that Miss Picky Pants is living with us again, I have yet another palate to please, and trust me, she did not get the nickname Miss Picky Pants for nothing. I swear, sometimes it seems she is more Kevin's kid than mine.
But I guess it is partially my fault because I didn't raise her with a large selection of different foods. It was mostly crap, crap, and ummmm ya more crap
So I am pretty much left alone in the realm of all things quinoa-ish.
But now I have the G-baby, and she is a year old now and have sworn to not make the same mistake with her that I did with my kids. I want to let her try everything and anything and hope and pray that she likes it.
Although her reaction to oatmeal makes me worry a bit.
I think it was mostly a texture thing. Coming from smooth baby food type things and all that good stuff. I gave her a bite and got the funniest look from her as she slowly let it dribble back out of her mouth. Oops!
But I am hoping that little Miss Kylee will learn to love quinoa like Nana does!

Speaking of my love of quinoa, let me go on a bit about this nifty little salad.
I am a huge fan of Mediterranean flavors, so when I was trying to come up with some different ideas for summer side dishes, that don't involve pasta or potato, I immediately went to a combo of those flavors + some nice nutty quinoa.
Look at all of that yummy goodness going on in that bowl right there! Good stuff right?
I ate that alllllll by myself, and trust me, I was happy to do so

You all know that I tend to become a creature of habit when it comes to food anyway.
I mean, I will eat cheese omelets with salsa every day of the week and never complain about it.
So eating this for lunch every day for a week was fine and dandy with me. I just grabbed a bowl and was able to sit right down and get back to work.
Wait, maybe that isn't such a good idea.
ACK! I am a food obsessed workaholic......

Aaahhhh that is OK, I love what I do, so there are really no complaints. Plus, who else can say they eat their job

I am serious, this is a perfect summer side salad or meatless Monday kind of meal.

INGREDIENTS:
1/4 cup extra virgin olive oil
2 tablespoons red wine vinegar
1/2 lemon, juiced
1/2 teaspoon dried oregano
1 teaspoon dried basil
1 clove garlic, minced
Kosher salt
Fresh cracked black pepper
4 cups cooked quinoa, chilled
2 cups grape tomatoes, halved
1 English cucumber, diced
1/4 cup Kalamata olives, pitted and halved
1/2 red onion, finely chopped
4 ounces feta cheese, cubed
