One of the few veggies that Mr. W likes to eat are carrots. So, using some of the fresh honey that my friend gave me, I decided to switch it up a little. These carrots are sweet, tender and delicious. I will definitely be making these again, they were a huge hit!!!
Recipe adapted from Sunny Anderson
Salt
1 pound baby carrots
2 tablespoons butter
2 tablespoons honey
1 tablespoon lemon juice
In a medium saucepan, bring water to a boil. Add salt and then carrots and cook until tender, 5 to 6 minutes. Drain the carrots. Add butter, honey and lemon juice to your pan. Then put carrots back in your pan.
Cook until a glaze coats the carrots, 5 minutes. Season with salt as needed. Serve immediately.
